leftover chicken fried rice


Time saving has become my second name. Or at least my current obsession. How do you make a meal with various leftovers? This is probably one of the best ways to do it - make fried rice.

I used Mark Bittman's recipe from his cookbook How to Cook Everything, but altered it a bit. Growing up just a few steps from China Town NYC, every fried rice I have ever eaten has had an egg in it. Oddly Bittman's does not. So I added it in. Makes the dish come together better and adds a nice creaminess to the crunchy rice. I found this Bittman fried rice recipe where he does add eggs.

Leftover Chicken Fried Rice
Serves 4-6. Adapted from Mark Bittman's Fried Rice recipe in How to Cook Everything

4 tablespoons vegan butter
1/2 medium onion, chopped
1 egg, scrambled
3-4 cups cooked rice
4 grilled chicken drumsticks, the meat cut off the bone
2 cups steamed broccoli, chopped
1/4 cup tamari sauce

1. Saute onion in butter in a large saucepan. Add rice and flatten it in the pan. Allow to cook undisturbed for a few minutes until browned. Flip over and cook the same way on other sides. Add egg and stir until cooked and mixed in with egg and onion. Add broccoli and chicken and tamari and mix until heated. Serve warm.

  1. If only The.Boy liked rice, I would probably make fried rice on a weekly basis with whatever random stuff we had sitting in the fridge! It's such a great leftovers meal.
