sweet potato vichyssoise soup
Joanne from Eats Well With Others commented on my straight up vichyssoise, thinking I'd used sweet potatoes instead of regular ones. What a fabulous idea! So here it is. It is my interpretation of my last vichyssoise recipe, only substituting sweet potatoes for the regular kind. And it came out fantastic!
Sweet Potato Vichyssoise Soup
Serves 6-8
2 tablespoons olive oil
1 large white sweet onion, chopped
4 large sweet potatoes or yams, peeled and chopped small
Vegetable broth, enough to cover onions and potatoes
Salt and pepper to taste
1/4 teaspoon cayenne pepper (or to taste)
2 teaspoons chili powder(or to taste)
4 teaspoons cinnamon powder (or to taste), plus more for garnish
1. Heat oil in a stock pot. Add onion and cook until translucent, without browning.
2. Add potatoes and vegetable broth, salt and pepper to onion. Bring to a boil and simmer until potatoes are tender. Add cinnamon, cayenne and chili powder and cook a little longer.
3. Blend all ingredients. Serve warm or cold with a shake of cinnamon.

Lol I wonder why I thought that! Maybe the color? Anyway I'm so glad you made a sweet potato version because that is something I probably need in my life.
