Here is a simple summer dish that puts a spin on your regular steamed veggies.
Sauteed Tomato and French Bean Melange
- 2 tablespoons olive oil
- Grape tomatoes, halved
- French beans, cleaned and trimmed
- 1 clove garlic, minced
- Balsamic vinegar
- Salt and fresh ground pepper, to taste
- 5-8 basil leaves, sliced
- Heat oil in a skillet. Add garlic and cook until fragrant. Stir in tomatoes and beans. Add vinegar, salt and pepper and cover. Cook until beans are tender and tomatoes have wilted, about 10 minutes.
