in search of the perfect chewy oatmeal cookie


Lately I've been hankering for some chewy oatmeal cookies. The kind I can feel good about eating a whole plate of.

These are pretty good. Chewy, for sure. Nicely sweet, not too much, not too little. Plus they have chocolate chips. Can't beat that. Not sure if they are the perfect ones. I will try some others and decide. Are you with me on my adventure? I hope so. Should be yummy one.

Chewy Oatmeal Cookies
Makes 24, adapted from Heart Mind & Seoul

Ingredients
  • 1 cup butter , softened
  • 1 cup raw sugar
  • 1/8 cup molasses
  • 2 eggs
  • 2 teaspoons vanilla
  • 1 1/4 cups all purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 3 1/2 cups oatmeal
  • 1 cup semisweet chocolate chips
Instructions
  1. Preheat oven to 325 F.
  2. In a large bowl cream together sugar, molasses and butter. Beat in one egg at a time, then stir in the vanilla. Combine the flour, baking soda, salt. Stir into the creamed mixture until just blended. Mix in oats and chocolate chips.
  3. Drop heaping spoonfuls onto parchment lined baking sheets. Bake for 12-15 minutes. Allow to coll before transferring them to a plate since they will fall apart before they have set.
