vegan pumpkin squares - happy thanksgiving

Pumpkin: the gift that keeps on giving. I have never made so many pumpkin dishes in my entire life. And this particular pumpkin did double duty. He was a Jack-o-Lantern first and then a wonderful tart. What a guy!

These squares are super easy to make and vegan too! I ran out of graham cracker for the crust and used ground up ice cream cones as a substitute. Worked like a charm.
