sweet potato muffins {the leftover club}
So school has begun! And now let's eat cake.
I made these muffins for my Leftovers Club partner, Liz from Honey and Nonno, but neglected to find out if she had any nut allergies. And, what do you know... she does! So these muffins are being eaten by my own family, the addition of cinnamon honey buttercream frosting (thank you Joanne) made them much more enticing than they were when naked (I offered them to multiple kids and not one of them liked them).
Let us call these a grown up version of the cupcake. Just enough sweetness to make it feel like a treat but not so much that your teeth hurt.
