So, the weather fooled us. Just when we thought summer was over it reared its head but with a vengeance! Luckily I had a few popsicles left in the freezer. We broke them out once the temperature rose.
Peach-Mint Popsicles
3-4 peaches
1/4 cup honey
One sprig mint
1/4 cup yogurt
1. Heat peaches, mint and honey in a saucepan. Once softened let cool. Take mint out and combine with yogurt. Freeze in popsicle molds of your choice.
I know about the weather lately, right? It's like the last gasp of summer. These popsicles look fantastic, I love honey in anything!
