eggplant tomato basil pizza {working with yeast}

The Fourth is coming and what better way to send it off with than a lovely veggie pizza?

My attempts at this very popular snack have gone less than perfectly. This time I waited too long to use the dough, what with life getting in the way and all, and it didn't turn out very tasty.

The colorful toppings however went really well with each other, so this dish bares repeating... when I have the time to make it as the recipe indicates.

Pizza Toppings
Olive oil
Salt and pepper
1 ball mozzarella cheese, sliced
1-2 ripe tomatoes, sliced
1/2 small eggplant, thinly sliced
10 basil leaves (placed on top, right after pizza comes out of oven)
