Persimmon flan is not one of them.
Weird, right? I couldn't understand it either. Why wouldn't this wonderfully flavorful fruit work with the smooth delicate flan?
Oh, don't get me wrong. It tastes okay, but the consistency isn't quite right. too creamy, or something. My attempt to get fancy with something that already was perfect didn't pan out. Not sure why I felt the need tp mess with it.
I added one persimmon, peeled and chopped, to the coconut milk, in case you want to repeat my error.

I've put pumpkin in flan before so I definitely would have thought that persimmon would work! Oh well...it was worth a try!
