sweet potato straws


I won't say these were easy.

They appear deceptively so from afar.

That is, until you start slicing them in your mandolin and realize that pushing a raw sweet potato through all those grooves and edges just doesn't happen without some sweat and strain.

Which is too bad. I would have made all three potatoes waiting on the shelve instead of just the one, but I had to give up. My fingers were too sore.

Despite the amount of time it took to cut the potato, we ate them in seconds flat. Wistfully searching the bottom of the bowl for any crumbs remaining.Totally worth it.

Sweet Potato Straws
Makes one small bowl, from Edible Perspective

Ingredients
  • One tablespoon olive oil
  • One sweet potato
  • Salt and freshly ground pepper, to taste
Instructions
  1. Wash potato. Run it through a mandolin with the 1/8 inch tooth attachment. This is not easy, as I mentioned above. Persevere. You'll be happy you did.
  2. Mix ingredients in a bowl. 
  3. Lay ingredients out evenly on a baking sheet. Cook at 325F for 15 minutes. Then toss and cook for 12 minutes. Then toss and cook in 3 minute increments until completely dried out but not brown.
