faux pizza {more ways to use leftover rice}

I don't know about you but once the school season started my whole life came to a complete stand still.

No, that's not right. It came to a whirling dervish that threatened to spin completely out of control.

So, here I am posting a pseudo-dish. But a worthy one, none-the-less. Because, if your preschooler is like mine you can make a whole pot of rice that you are sure he will eat only to find that rice (which,  two days ago, was his very most favorite dish in the whole wide world) has become the most disgusting thing on the planet (preschoolers are dramatic).

In walks PIZZA-rice (you whisper the rice part).

PIZZA-rice
Serves 3-4
1 pot leftover rice
1 baseball sized frozen ground turkey blob
Any amount of leftover tomato sauce
Grated mozzarella cheese

1. Cook turkey in a pan until browned and cooked all the way through. Stir in rice and tomato sauce and cook until heated through. Grate mozzarella on top and cover until cheese is melted. Serve immediately. Who knows, you may get lucky enough to get three bites into your kid.

  1. Awww it really is crazy how picky kids become at that age! One second they love something and the next they hate it. I'm so glad you were able to accommodate his PIZZA-rice cravings. :P
