Grapes are super sweet, maybe the sweetest fruit around, and they were always a huge treat for me and my sister growing up. We'd devour them before they were out of the shopping bag.
I have been meaning to make grape soup ever since I saw it on Kahakai Kitchen. I love the taste of cucumbers mixed with fruit. I prefer a more wet, less creamy soup so I left off the almonds and bread. Here is my take on grape soup.
Grape Gazpacho
Serves one, loosely adapted from Kahakai Kitchen's Grape Almond Soup
1/2 English cucumber
1 shallot (2 if you like it spicy)
1 1/2 cups green seedless grapes
10 mint leaves
1-2 tablespoons white wine vinegar
Loosely chop cucumber and shallot. Place all ingredients in blender. Chill before eating.

This sounds so refreshing! Like one of those gourmet spa drinks with cucumber water..except better.
