intensely chocolate vegan sables with raspberry cream {the leftovers club + book giveaway}



Yes, I am baking again. I couldn't help myself. And yes, I made the same cookie recipe again. But wait. Before you chastise me I have a good reason. Smitten Kitchen's Intensely Chocolate Sables are so good they bear repeating. In fact, this time I bothered to follow the instructions to the letter and had no trouble pulling the dough together, even without the egg yolk.

I also added a new flavor by sandwiching a cream of one part no-sugar, fruit-only raspberry butter mixed with one part confectionery sugar and one part coconut oil in between the cookies.



Chocolate and raspberries. You can't go wrong with that, right? I also vegan-ized them (is that a word?) by leaving out the egg yolk and using vegan butter. Even if it doesn't make them healthier and I am ultimately not the one eating them, it makes me feel better somehow.

I made these for a cookie swap hosted by Savory Simple called The Leftovers Club. A kind of Secret Santa, only in May. So, a Secret Spring Santa! And in honor of our kitty cat, I made these in her form. They're both just as sweet. My Secret Spring Santa is Heather at Sugar Dish Me who sent me a delicious strawberry lemonade loaf.

It offers a lot of helpful hints for cooks, many of which I'd already heard but haven't followed, some I do follow and a few I'd never hear of at all.   1. These cutters are really cute, I have 3 dogs but I do love cats too, where did you get the cutters from? I have a friend called Zeke who's a vegan (a really strange name I know) and I was just saying to him the other day 'how do you live without cake and biscuits?!' I'll be making him some of these (: I definately might need some advise from the dos and don'ts book right now though as the other week I made chocolate biscuits and forgot the sugar!   2. I actually thought about making these sables for this month's Leftover Club also! But didn't. Maybe next time. The raspberry filling sounds perfectly paired with the chocolate!

    And that book sounds awesome! I love learning new kitchen tidbits.

  3. I use the word "veganize" all the time - it's definitely a realy word!This recipe has been on my list of things to veganize for a long time but I wasn't sure how I would replace the egg yolk...I guess I will try just leaving it out... Thanks for the inspiration!

  4. Hey!! I was just sifting through the spreadsheet and saw the date in your URL and realized you'd posted the cookies you sent me already! We got them Saturday and they are a MAJOR hit with the boys. Every time I turn around my littlest is saying, "Mommy, can I have a cookie?"   6. How cute are these cookies!! They sound delicious! I have never heard of that book before! I inherited my grandmother's copy of the Joy of Cooking and its from 1960 - the cooking tips and techniques in the book are hysterical. Totally geared toward that era.
