pumpkin cookies with butterscotch chips {#theleftoversclub}
Pumpkin cookies is a misnomer for this recipe. What they should be called is BUTTERSCOTCH CHIPS (with pumpkin) COOKIES.
The first time I made these I used chocolate covered orange peel in place of the butterscotch. I was dubious of those chips. I mean butterscotch is a hard candy, not a soft chip. What could they actually be made of?
But WOW. Butterscotch chips are amazing. They filled my kitchen with that distinct butterscotch smell. So comforting. And they taste just as good.
I am still not sure what those chip are made of (I could read the bag, but then I may not like what I read) but I don't care so much now that I've tasted them.

apple cider caramels {the leftovers club}
These yummy caramels may be the best thing that has ever come out of my kitchen. No joke.
This was my first foray into the world of candy making and it was a wildly huge success. Recipe was found on Deb's Smitten Kitchen site (need I say more?). Only thing is - and please listen closely - no matter how delicious that soft, liquidy, caramel goodness looks in the pan DO NOT try to taste it before it has set. Or you'll have a burned lip for a week. And that's no fun. Take it from one who knows.
I made these for the Leftovers Club, so this lucky lady - Aly of Cooking in Stilettos - will be receiving them. And hopefully enjoying them. But how could she not?

zucchini and egg breakfast muffins
I don't know about you but once it gets cold I get baking. And here is a dish that bridges the two seasons, summer squash and basil in a savory, eggy breakfast treat.
This is my real offering to Liz at Honey and Nonno for the Leftovers Club swap.
Zucchini and Egg Breakfast Muffins
Makes a dozen regular sized muffins
Adapted from Mince and Type
3 tablspoons olive oil
3 shallots, diced small
1/2 tablespoon salt
1/4 teaspoon red chili flakes
2 garlic cloves, minced
2-3 medium zucchini, diced small
3/4 cup white whole wheat flour
2/3 cup white whole wheat flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
3 eggs
1/2 cup plain greek yogurt
3/4 cup fresh basil, shredded
1/2 cup shredded sharp chedder cheese
Preheat the oven to 350 degrees. Oil a 12-cup muffin tin.
Add olive oil to a saute pan over medium heat. Add the onion and cook for 5 minutes or until it becomes translucent. Add in the salt, chili flakes and garlic. Cook for another 1-2 minutes until the garlic is fragrant, then add in the diced zucchini. Cook for about 8-10 minutes. Remove from heat and cool. You should have about 2 cups of the zucchini mixture.
Whisk the flour, baking powder, salt and pepper together in a bowl. In a separate larger bowl, whisk the eggs until foamy, then add the cooled zucchini mixture, yogurt, and basil. Pour in the dry ingredients and half of the cheese. Mix well.
Pour the batter into the muffin cups and sprinkle the remaining cheese on top. Bake for 25-30 minutes. Enjoy!

sweet potato muffins {the leftover club}
So school has begun! And now let's eat cake.
I made these muffins for my Leftovers Club partner, Liz from Honey and Nonno, but neglected to find out if she had any nut allergies. And, what do you know... she does! So these muffins are being eaten by my own family, the addition of cinnamon honey buttercream frosting (thank you Joanne) made them much more enticing than they were when naked (I offered them to multiple kids and not one of them liked them).
Let us call these a grown up version of the cupcake. Just enough sweetness to make it feel like a treat but not so much that your teeth hurt.

spicy gingersnaps {the leftovers club}

My oven has a mind of its own. It is a bit worrisome. I put the knob at 350 degrees and a few minutes later (after I smell burning cookies) I find out it is on 450 degree. Worrisome, yes.
Luckily, I devised a plan to make it more regular. I placed a baking sheet inside and that seems to do the trick. Unluckily, I didn't figure it out until 3/4 of my cookies were brunt. Luckily, there were enough salvaged to ship off for this month's Leftovers Club.
I used Smitten Kitchen's recipe. It didn't come out as snappy as I like, but there were extenuating circumstances. Hopefully Heather over at Sugar Dish Me will like them.

mojito cookies {the leftovers club}
While perusing Smitten Kitchen's recipes for some citrus-y treats I came across this recipe for margarita cookies. I too have yearned for the taste of a drink that brings me back to a place and time. Only my drink of choice is the Mojito.
Unfortunately they ended up looking like fried chicken nuggets (as per a friend), and they really did not have that minty-lime flavor I was going for, but they did get eaten. And those that did not eaten were sent along to my partner this month, Jen at Juanita's Cocina for The Leftovers Club at Savory Simple. I hope she liked them!
Mojito Cookies
Adapted from Smitten Kitchen's adaptation of Dorie Greenspan’s Sablés au Citron
Makes about 50 cookies
Cookies:
2 sticks (1 cup) unsalted butter, at room temperature (I used vegan butter, which is salted)
1/2 cup confectioners’ sugar, sifted (I used granulated sugar and did not sift)
Pinch of salt
2 teaspoons rum
Grated zest of 2 limes
2 tablespoons fresh mint, minced
2 cups all-purpose flour
Coating:
Approximately 1/2 cup clear sanding or other coarse sugar
1. Put the butter in the food processor and mix until it is smooth. Add the sugar and mix again until the mixture is smooth and silky. Beat in the salt, rum, grated lime and mint. Add the flour, mixing just until it disappears. Turn the dough out onto a counter, gather it into a ball, and divide it in half. Wrap each piece of dough in plastic wrap and refrigerate for about 30 minutes.
2. Working on a smooth surface, form each piece of dough into a log that is about 1 to 1 1/4 inches thick. Wrap the logs in plastic and chill for 2 hours. (The dough can be wrapped airtight and kept refrigerated for up to 3 days or stored in the freezer for up to 1 month.)
3. Position the racks to divide the oven into thirds and preheat the oven to 350°F (180°C). Line two baking sheets with parchment paper.
4. While the oven is preheating, remove the logs of dough from the refrigerator, unwrap them, and roll the logs in the sugar, pressing the sugar/salt mixture gently to get it to stick if necessary, then, using a sharp slender knife, slice each log into cookies about 1/4 inch (7 mm) thick. Place the cookies on the lined baking sheets, leaving about 1/2 inch (1.5 cm) space between them.
5. Bake the cookies for 12 to 14 minutes, or until they are set but not browned. Transfer the cookies to cooling racks to cool to room temperature.
Keeping: Packed airtight, the cookies will keep for about 5 days at room temperature. Because the sugar coating will melt, these cookies are not suitable for freezing.

lavender - lemon macarons {leftovers club + book giveaway}
Joanne made an apt analogy when she compared making French macarons to giving birth.
While sifting my almond flour for these cookies, I was reminded of giving birth to my son. Not the unbelievable pain that it entailed, but the fact that I will never forget it. Sifting almond flour, as painful as it is, and no where near the pain experienced while giving birth to a baby, was something I had completely forgotten. And there I was, standing in the kitchen again, racking a wooden spoon through powder that just didn't want to go through those tiny sieve holes. I totally forgot how much work these little babies require.
This time I made my macarons for The Leftovers Club. I met Ruthy from Omeletta on Monday and we exchanged our goodies. She gave me some yummy chocolate pretzel puffed rice treats. So handy to be swapping with a fellow New Yorker.
I had some mishaps this time, but the result is just as yummy. I tried to flavor and color the cookies with edible lavender flowers, but once ground up the flowers looked more green than their namesake color, and once cooked there is no discernible added flavor. I had some trouble piping them into nice circles too. I filled them with lemon curd. I hope Ruthy liked them.

vegan almond milkshake
Popsicles.
Need I say more?
I recently found a blog, Vegan Everything Vegan Anything, by the mother of one my son's playmates, and her post on popsicles really got my attention.
I have no molds so I made the next best thing. Milkshakes, using her popsicle recipe as a jumping off point.
This was a friend of mine's idea. She said she was making the best milkshakes lately and described something similar to the recipe. I knew I had to make it, and soon.
Vegan Almond Milkshake
1 cup almond milk
1 banana
2 tablespoons honey (not technically vegan, but you can use maple syrup or agave)
2 tablespoons almond butter
1/2 cup ice
Mix everything in the blender and enjoy.

intensely chocolate vegan sables with raspberry cream {the leftovers club + book giveaway}
Yes, I am baking again. I couldn't help myself. And yes, I made the same cookie recipe again. But wait. Before you chastise me I have a good reason. Smitten Kitchen's Intensely Chocolate Sables are so good they bear repeating. In fact, this time I bothered to follow the instructions to the letter and had no trouble pulling the dough together, even without the egg yolk.
I also added a new flavor by sandwiching a cream of one part no-sugar, fruit-only raspberry butter mixed with one part confectionery sugar and one part coconut oil in between the cookies.
Chocolate and raspberries. You can't go wrong with that, right? I also vegan-ized them (is that a word?) by leaving out the egg yolk and using vegan butter. Even if it doesn't make them healthier and I am ultimately not the one eating them, it makes me feel better somehow.
I made these for a cookie swap hosted by Savory Simple called The Leftovers Club. A kind of Secret Santa, only in May. So, a Secret Spring Santa! And in honor of our kitty cat, I made these in her form. They're both just as sweet. My Secret Spring Santa is Heather at Sugar Dish Me who sent me a delicious strawberry lemonade loaf.
