Pesto has been my go-to afternoon snack lately, mostly due to the raw garlic it contains. This is a nice variation. I spread it on little slices of corn bread but any hearty bread would be great.
Pistachio Cilantro Pesto
Make 1 cup spread
1/2 cup roasted, salted pistachios (you can use raw and add salt)
1/2 cup cilantro leaves
2 cloves garlic
olive oil
Put all ingredients into a food processor and blend except oil. Add olive oil and keep blending until you have the consistency you want. I made a spread to put on breads but you can thin it out for pasta.
